Founded in 2016 by Jérémy Decoster, Les Cortis tends 6 hectares of clay-limestone parcels in the Bugey foothills, at the crossroads of Jura, Savoie and Burgundy, using certified organic and biodynamic farming.

All vineyard work is done by hand, with co-planting and biodiversity at the heart of the estate's approach.

In the cellar, Jérémy practices strict non-intervention — whole-cluster maceration, indigenous yeasts, and minimal to no added sulphites.

The domaine is entirely dedicated to organic and biodynamic farming to foster vibrant soil health and biodiversity. All work is done by hand. In the cellar, vinification is low-intervention, non-interventional, and characterised by:

Whole-Cluster Maceration (for reds)
Indigenous Yeasts
Minimal or no sulfur added (typically only a small amount is added at bottling to ensure stability).
